Balancing my diet

I'm struggling to find ways to get in all of my calories while staying within my limits on protein, fat, carbs, and sodium. I'm taking the 40/40/20 challenge. I find that, at the end of the day, I have 500 calories left, but no fat or sodium left. What can I eat that's high in calories, but low in fat, carbs, and salt? Seems impossible! Help?

    A nice big piece of lean protein...chicken or fish!

    0% greek yogurt (plain) is also low on fat and carbs. So is cottage cheese.
