Easy Rice Breakfast

I came up with this recipe about 3 years ago when I had some left over rice. It's very good, and filling. If you want to use less rice that's fine. However 4 oz isn't really that much. I hope you all enjoy!

4 oz. cooked rice (I used jasmine rice)
1 tablespoon toasted coconut
1 tablespoon toasted sliced almonds
2 tablespoons dried cranberries
2 tablespoons low-fat 1% milk (or soy, almond, or coconut milk)
2 teaspoons honey of your choice (blackberry is my favourite)

In a bowl weigh out your rice. Pour in your milk, honey, and cranberries and microwave for 1 minute. Remove from microwave and stir; add almonds and coconut. Enjoy!

    It is good for dessert, kind of like rice pudding. I forgot to mention that you can use brown rice instead, and also agave if you want... I have yet to try quinoa, but have thought of trying it for a lower carb option. If anyone uses quinoa, can you post if it was good?
