NEW VEGGIE EASY RECIPES PLEASE!

I LOVE VEGGIES! I hate to admit that I am actually tired of them, but it just seems like the same old thing! ANY IDEAS?

Have you ever baked asparagus? Line it on a cookie sheet and spray lightly with Olive Oil. Bake at 350 degree oven for about 20 minutes. It's wonderful!!
I also will sometimes scoop out the center of a baked potato and mash it in some non-fat milk. Add diced, cooked asparagus or broccoli and enough milk to make a soup consistency. Save the skin that still has a little potato left and use it for a twice baked potato for another meal.
Fill potato skin with diced, cooked vegetables and sprinkle a little fat-free or low-fat cheese on top. Bake at 375 for about 15 minutes or until cheese is melted and everything is heated thoroughly. I often reserve some of the vegetables I've cooked for my other meals and keep them in baggies so I don't have to prepare it from scratch.
