this looks healthier. as long as you're careful with the amount of cheese and the type of tortilla you use. if you're gonna use that, i guess!:)
  • I make this all the time. Its awesome, and mostly flavored by chiles:)

    Slow cooked pork:

    1 boneless pork shoulder roast

2 white onion- cut into thin strips

2 poblano chiles- cut into thin strips

    2 jalapeno chiles- minced

2 Anaheim green chiles- cut into thin strips

2 cups of tomatillos- cut into large chunks

    3 cloves of fresh garlic

    1 Tbsp. of salt

    1/2 tsp. of garlic powder

    1/2 tsp. of black pepper

    1. Cut onions into fine strips. Place in the bottom of the crock pot.

    2. Wash and cut the tomatillos and place half in the bottom of the crock pot.

    3. Place pork roast into the crock pot and sprinkle with salt and garlic powder.

    4. Add remaining tomatillos and cut chiles on top of pork roast.

    5. Turn crock pot on and cook for a minimum of 6 hours. If crock pot has a high setting, can use this for the first 2 hours, but don't rush it or the pork will be tough.

    6. After 6 hours, pork should be fork tender and ready to shred.

    7. Using tongs, shred the pork into taco size pieces. Add pepper and additional salt to personal preference.

    8. Serve with fresh warm tortillas, salsa, minced onions, chopped cilantro and avocado. Eat and enjoy.

Don't know how authentic this is, but it's only about 193 cals a serving.
