Changing My Diet, Some of My New Dishes

Before I started using MFP I had begun to change the way I was eating. But since I have started using this site I have been thinking about food a lot, I think about what I can eat, what I want to eat. Then I think about how can I make this so that its healthy, filling and satisfying.
Here are a few examples of what I have been eating.
Has anyone else begun the process of completely changing how you eat.

Pan-seared salmon, shiitake mushrooms, sweet red peppers, green onion in a fish broth

Chicken, English peas, sauteed spinach, red and white beans with a drizzle of olive oil

Seared tofu, green onion, courgettes, cucumber, celery and sesame seeds with olive oil

Broccoli soup with bacon
