Short on carbs. Help? Food ideas?

Hi mpf-ers!

I have 144 grams (?) of carbs left in my counter today and I still have 400 calories so I was wondering if anyone has ideas for foods that I can eat that are high in healthy carbs. I am in the red numbers for fat, protein and sodium so something that is low in those would be handy.

Also, just to make things interesting ;) I am gluten and dairy free which means I can't just go eat a piece of bread because gluten makes me very sick. Diary doesn't make me as sick but it's something I avoid. So: high carb, low in sodium, fat and protein and doesn't contain gluten or dairy. It's a puzzle I know : p

Any ideas?

    A bowl of cereal with 2 cups cereal and 1 cup whole milk.

    Beans of any kind. Being over on protein is just fine as long as you don't have a medical condition that requires you to keep it low. MFP's standard protein level is low anyways. Also, I'm prediabetic and have to watch my carbs/sugars very closely. I'm over according to MFP everyday.

    Thanks for the ideas! I don't have any gluten free cereal right now unfortunately, but next time we go into town I'll buy some just in case.

    jeanienherndo- I know what you mean. I'm over on sugar everyday too. If I eat an apple and a banana in the same day I'm over, its crazy! I manually changed my settings so my protein intake would be higher because I am trying to build muscle in order to burn more fat :) I've been under every day for weeks but I just started taking protein powder three days ago so I'm experimenting with how much I should have in a day. I went way over today but since I was focusing on that I wasn't paying attention to my carb intake for the day.
    I like the bean idea, I think I'm going to go figure out something to do with the can of garbonzo beans in my cupboard.

    Quinoa. It's gluten-free, and you can mix pretty much anything into it and make an awesome salad or rice substitute. It has a few grams of protein (9 per 1 cup cooked I think), and it's a great source of whole-grain carbs.

    Mmmmmm...love quinoa. I don't know why I didn't think of that. Do you have any recipes or a favorite way to eat it?

    You could make hummus! There are also really good recipes for roasted chickpeas out there...you probably have the ingredients for that on hand.

    Thanks! I've been meaning to make hummus but I had no idea what the nutritional facts for it are. Glad to know its got some good carbs. Great ideas everyone, thanks!

    You don't have to eat extra carbs just to make the number go up. There are significantly better foods to overdose on. Stocking up on carbs just for the sake of meeting your mfp "quota" seems like a backwards idea to me. Eat some peanut butter or nuts or yogurt instead and get some more useful calories out of it.

    The baked one with spinach is especially good.

    Another one... I drop a packet of taco seasoning in when the quinoa starts to boil, then when it's finished I pile on fresh tomato, onion, lime juice, and cilantro. If you combine it all, you've got a great meat-free taco filling.

    Home made fried rice - stir fry a bunch of veggies and toss in a bit of cooked brown rice. Serve with a poached egg on top. Yum!
