Veggie Help

Ok- so on the work days I am good at eating my veggies- but they are Green Giant Steamed Fresh and I am kinda sick of them. I eat veggie burgers/black bean burgers but don't count those as veggies. On non work days- I only eat them with lunch and dinner when I really put an effort in (lunch is usually in the form of salsa haha) I am good at eating fruits (average 2-3 a day) and I try to eat cucumbers/carrots with hummus and snacky foods.
I feel like I am not eating enough veggies- or the right kind of ones. I don't even enjoy veggies anymore and start to crave more carb foods- which needs to stop. I need more ways of eating more veggies maybe sneaking them in?!?! Suggestions/ recipes that are veggie filled... microwaved or raw is better as that is what I have available at work at home it does not matter.
Oh- the only veggie I DO NOT LIKE is mushrooms. ick.

Have u ever tried Dr. Praegers' California Veggie burgers? The first ingredient is string beans, and then lists all kinds of veggies in them. There isn't one ingredient that is crap. Totally yummy. U can find them in most grocery stores in the frozen organic section.0

I do a lot of stir frys.
I also make casserole type meals using canned tomatoes.
Soups with lots of veggies.
Salads. You can make some really meaty fill you up salads.0 -
i eat a ton of veggies, and I've got my boyfriend eating them too (And liking them) even though he claims to not be a veggie person. I load up on veggies. Lunch & dinner - 2/3 of my plate is veggies. I'm big into zucchini, yellow squash, eggplant, tomatoes, mushrooms (cooked they are sooo delish!), onions...all fresh. and frozen, I eat a lot of stir fry blends, and cauliflower & broccoli. Oh and I also eat a ton of beans & lentils.

And if you like frozen veggies get the organic. Worth the extra not to have added pesticides and chemicals. Green Giant = huge corporation = bad.0

So try some veggies you've never tried, maybe even some ones you've tried and disliked in the past, because variety will sometimes trick the mind into liking new foods.
Lightly steam some asparagus, or brussels sprouts.
Carrots have some sugar in them, so I find they are a great low-calorie crunchy snack that can help with carb carvings - I usually eat them with raw broccoli and cucumber or something so I can fool myself into eating some green stuff too.
One of my favorite meals is "taco salad". I take a mound of romaine lettuce shredded pretty fine, heap it high on a plate, and put a bunch of Morningstar "veggie crumbles" (meat substitute, though you can easily use ground beef or turkey or whatever) that I've added chili powder and seasonings to. Then I put a generous dollop of salsa and a generous dollop of yogurt on it. The lettuce adds "crunch" and makes me crave chips a lot less, fills me up quickly, and I'm eating over a half-pound of green leafy lettuce. It's a HUGE, filling, balanced, and surprisingly low-calorie meal.0 -
I'm not a huge fan of veggies so I try to double up at dinner. Either make a casserole that has tons of veggies in it (double whatever the recipe calls for or even add in my own - bell peppers and musrhooms are our favorites) or have a huge side of broccoli or string beans (at least 1 cup) with whatever meat and side we're having.
However, I've done a few things in the past to get my veggies in. Eat baby carrots and/or pea pods (snow peas?) with your lunch. They both serve as a nice crunchy side and go pretty well together if you mix them. Every little bit helps - add lettuce, tomatoes, cuke slices, avocado, etc to your sandwiches.0
