Low Fat Guacamole

Below is the recipe & I noted where I made changes & also my review.


Ingredients:
- 1 medium avocado, ripe, peeled and pitted
- 1 15-oz. can young peas, drained and rinsed
- 1/4 cup chopped tomatillos --- (I substituted 1 can of mild Ro-Tel instead of these, onions, and tomatoes)
- 1/4 cup finely chopped red onions --- left out
- 1/3 cup chopped tomatoes --- left out
- 1/4 cup Labane Yogurt Cheese* or fat-free plain Greek yogurt --- (I used the Greek Yogurt)
- 2 tbsp lime juice
- 4 cloves chopped garlic
- 1 tsp cumin
- 2 tbsp chopped cilantro --- (couldn't find good fresh so I left it out)
- Kosher salt and pepper to taste

*Labane Cheese can be found at most Kosher Grocery Stores

Directions:
Put peas in a medium bowl and mash with a fork until almost smooth. Add in avocado and mash that into the peas until smooth.

Add remaining ingredients and stir until combined. Cover surface with plastic wrap and refrigerate up to 1 day. Makes 6 servings.

Serving size is 1/3 cup.
Each serving = 1 Weight Watchers Point


This recipe had great flavor right after I made it. It tasted like restaurant quality guacamole. I couldn't taste the peas. I made it for lunch yesterday. I had some more around supper time and did notice a little more of the pea taste. I added a little more lime juice, cumin, and salt and it masked the peas again. This morning the guac still looks green. I didn't see any brown! I brought it to work for lunch so we'll see how it looks/tastes then but I think I am in love with this recipe. I normally hate peas and while I know the fat in avocados is healthy, if I can make it lower fat I will try! I also think adding a little more greek yogurt wouldn't hurt it too much.

The MFP calculations per my adjustments makes a 1/3 c. serving:
