Tired of tomato based sauces? Try using butternut squash
We tend to eat things with sauce in our house because my daughter needs something to coat her carbs - she often wont eat much dry food. Shes only 2. Anyway I was getting a bit fed up of tomato-based sauces -even tho I dress them every which way. For me cooking in cream or oil takes too many cals out of the rest of my day - whats a girl to do?
So...I have been experimenting with using butternut squash instead. Basically I chop up the squash and mince it in the blender and with a bit of stock use this instead of chopped tomatoes. Works really well in coconut curry style recipes whcih already have that slight sweetness from the coconut. Makes a nice change.

We are BIG squash lovers in our household. I grow lots of them in my garden, and we just lightly cook them, mash them, throw the mashed flesh in zip-loc freezer bags, and toss them down in the deep freeze. We use it in everything from breads to sauces to homemade squash butter (just cook it down a bit and add some sweetener (maple syrup ROCKS!), and there you go!)0

i have an intolerance to acidic foods, and cannot tolerate tomato sauce well.
i roast 3 red peppers and 1 yellow pepper (coat slightly with oil), then take the skins off and puree them. put that in a small pan and add water or vegetable broth and simmer, add spices and you can use that as an alternative to tomato sauce, not as many calories as a cream sauce and not too hard to make.
i have also taken sweet potatoes, cooked them and pureed them, added vegetable broth and simmered too, and put that over pasta as a sauce. both of them delicious, i know spaghetti sauce all the time can burn some people out.0 -
