Crock Pot Black Bean Soup
Minutes to Prepare: 10
Minutes to Cook: 360
Number of Servings: 10 (1.5 cup servings)
Ingredients
1 16 oz bag of black beans
1 green bell pepper
2 garlic cloves
1 can fire roasted tomatos
1 quart low sodium chicken stock
1 onion
1/2 pound sausage, browned (optional)
Spices: cumin, chili powder, chipolte powder, salt and pepper to taste
Directions
1. soak beans over night
2. in crock pot-add beans, chopped veggies, browned sausage (optional), and can of tomatos
3.cover with chicken stock and water if needed
4. cook on low for 6-8 hours
5. take about 1/2 of the beans (no sausage) out and blend together in blender for creamier soup

I know some people like sausage in theirs, my fiance likes it that's why I put it there!

I'm probably going to make this sometime. It's not for the crock pot but you could just throw all the ingredients in the crock pot instead.
INGREDIENTS:
1 teaspoon canola oil (I'd rather use olive oil)
1/2 lb turkey kielbasa, low-fat, thinly sliced
2 small carrots, chopped
1 celery, chopped
1/2 red bell pepper, chopped
4 cups chicken broth, reduced sodium
15 ounces black beans, rinsed & drained
1/2 teaspoon oregano
1/4 teaspoon pepper
10 ounces frozen chopped spinach, squeezed and dry
DIRECTIONS:
1 Heat oil in large nonstick skillet over med-high heat.
2 Cook kielbasa until lightly browned.
3 Add all remaining ingredients except spinach; bring to a boil.
4 Reduce heat and simmer about 10 min, until vegetables are tender.
5 Add spinach and cook until heated through.
I've never made it before I just found this online. I had black bean soup with kielbasa sausage in it at my cousins house and it was really good. I've been meaning to try and make it but I forgot about it. Thanks for reminding me lol.
