Delicious avocado dressing/dip

Put all these things in a food processor and blend til smooth and creamy. Found this on my Spark Recipes app:

• 1 avocado, pit and skin removed
• 4 oz (1/2 cup) nonfat Greek yogurt
• 2 tbsp chopped onion
• 2 garlic cloves, chopped
• 4 tbsp lemon juice (this is a bit too tangy - I would reduce by half)
• 1 tbsp parsley (or might try cilantro if you like that flavor)
• 1 tsp salt

It's 40-50 calories in a 2 tbsp serving (depending on size of the avocado). If you like spice, you might add some chopped chipotle or crushed red pepper. With a medium sized avocado:

41 calories
3 carbs
3 fat grams
1 protein gram

    I was never really a fan of avocado, but I have never had it like that. Thanks for posting, Can't wait to try it! :smile:

    Thanks, ladies! I searched for avocado dressing recipes in my attempt to make a low cal version of the Fuzzy's Taco Shop fajita salad which is so good. If you like that type of thing, this is what I put in it versus what Fuzzy's does:

    Lettuce - I usually mix in some spinach with the iceberg
    Feta - I use fat free instead of regular, about an ounce
    Tomatoes - no substitute needed
    Grilled chicken or steak - I use just 1/2 cup to keep calories down
    Cilantro - if you like it (I don't)
    Avocado dressing - in place of their delicious avocado ranch

    I also add in a sliced brown mushroom - Fuzzy's doesn't

    This is even a hit with my hubby.
