Memorial Weekend

Ok so I'm going camping Memorial Weekend, Friday night through Monday morning. Usually I would just get booze, hot dogs, chips, etc. But with my new life style change I don't want that weekend to mess up my journey. So ideas for food to bring with? I plan on bringing a big cooler with. My boyfriend and friends may think I'm crazy but I might bring some asparagus and grill it, yum!

    We go camping a lot too - I usually make fresh patty burgers and freeze them, by the time we get around to eating them they are defrosted. I use the least fatty ground beef I can find, usually 97%, mix it with a bit of salt, pepper, garlic. I add cheese to the man's burger :)

    I recently tried out the recipe creator on the site. I would play around with that and come up with healthy camping meals!

    He also requests Italian sausage, so I bring the turkey ones for me. Breakfast is eggs & english muffins, but I switched to the 100 calorie ones. I keep it in the camping theme, just make the healthier choices. I also pack a ton of fruit for the munchies (apples, oranges, bananas, grapes, etc), cold veggie salads, salsa & chips, sandwich stuff too.

    We hike a lot which gives exercise calories so your intake is a bit more! Enjoy nature and have fun! We are thinking of camping over that weekend too.

    I take tons of veggies and grill then up with some chicken and tofu. What ever is cooked and not eaten the night before gets mixed in with eggs for breakfast. For snacks try trail mix, dried fruit, fruit and yogurt.

    I would probably take booze, hot dogs, and fruit and veggies.

    Booze = 100 proof Captain Morgans (83 cals a shot) to mix with my Crystal Light or if I am splurging, then Diet Coke or Diet Dr. Pepper Vanilla

    Hot Dogs = All white turkey hot dogs @ 45 cals a shot - yum!!

    Bread = whole wheat flat bread, pitas, or low carb tortillas (45 - 50 cals each so my hot dogs are only 100 cals each)

    Maybe some squash (love it grilled), green tomatoes (chopped up on hot dogs with some mustard, yum), and probably some big ol' portebellos.

    Snackin' food: Almonds, dried cranberries, sunflower seeds, crumbled rice cake, whatever you like, premeasured in zippy bags so I know I won't go over my limit. And popcorn - get ya some over the open flame popcorn. If the pilgrims could, you can too!

    And fruit. I eat lots of fruit anyway and it keeps well.
