This is my second day on this and I am finding very hard to eat to daily calorie amount. Please help

Are you still eating everything you did? If you are a big eater (I am sometimes, I will admit), you might need some fillers. Try lettuce, cabbage, spaghetti squash, acorn squash, cool whip, sugar free pops, etc.
Also, you might want to drink a glass of water (or tea) or even two or three before and with meal. I'm at 700 cals today and I feel like I'm gonna die. I overdid it on the spaghetti squash with spaghetti sauce before I ate my fajita salad (same as fajita, but everthing goes on a giant bed of lettuce and is cooked with no butter or oil).

Or start slower and set your goal to lose .5 lbs/week instead of 2 lbs/week.0

Right. Well then, use can use my stand-by of almonds. Tons of nutritional value and 42 cals for 6 = 168 for 24. High in protein, awesome for sugar and cholesterol probs.
If you like skim milk, maybe throw in a protein shake for another 200ish cals.0 -
I agree with the fillers. Add mushrooms, peppers, onions ect. to your pasta sauce. Add lettuce tomatoes onions to sandwiches. Have you tried speghetti squash? once cooked and shredded it will take on the taste of what ever you put on it. You can eat it like pasta without all the calories. Make sure you drink a lot of water, it really does help! If you have a hard time with drinking plain water, try adding lemon or drink cold brewed iced tea with lemon, try not to add sweetener.
