Easy Low-Fat Oven Fried Catfish- So Yummy...

My husband loves fried catfish but obviously that's not on my menu these days. I found a fantastic recipie that I made tonight and we all loved it. My husband is very picky and not a fan of healthy or low fat so if it pleases him, it must be good. You would never know that it's not fried. (I used Zatarans for the batter/fish seasoning and made Emril's Essence for spices which I found on foodnetwork's site- it is spicy though and I cut out half the Cayene).
