This chocolate cake is sooo good! It's moist, fluffy, sweet, healthy, and high in protein. It's got two secret ingredients: beets and black beans. What?? The beets give it a fluffiness and moistness like no other, but you don't taste the beet flavor at all. The beans pretty much replace whatever flour you would have used, they keep the cake from drying out (whey protein powder often makes baked goods really dry unless you balance it out with something), and, like the beets, you don't taste them. Definitely try this cake :)

1 beet, cooked (100g)
4 scoops vanilla whey protein powder
1/2 cup oat bran
1 cup oat milk (or any kind of milk)
1 tsp vanilla extract
1/2 cup cocoa powder
70g dry black beans, cooked (150g cooked)
6 tbsp stevia (add an extra 2 tbsp if using splenda or regular sugar)
2 tbsp coconut flour
2 tsp baking powder
1/2 tsp baking soda

Blend everything together. Bake @ 325F/160C for 45 min

Makes 8 thick slices

154 calories
19.7g carbs (4g fiber and 2.4g sugar)
15.8g protein
2.5g fat
