crispy baked sweet potato fries

sweet potato (one potato usually serves 3-4 people)
extra virgin olive oil or canola
cornstarch
seasoning of your choice

-remove peel from potato
-cut potato into strips..(not to thick or they will take way longer to cook)
-soak in water for 30 minutes
-toss in cornstarch
-lay fries on a baking sheet and drizzle evoo over them and toss the fries again to cover them with the oil
-add seasoning
-assemble fries with plenty of space between them on a baking sheet (doesnt cook well when theyre crowded together)
-bake at 350 for 15-20 minutes (depending on thickness of fry)
- once cooked i usually add a little bit more seasoning cause i love flavor..lol..enjoy
**(watch these carefully cause they will burn at the edges) **

  • i like to use a variety..just depends on what im in the mood for..(spicy chipotle seasoning), (garlic and salt) (cinnamon, paprika, and salt) (cajun seasoning) or (brown sugar). All of them taste great!!

  • hmmm..wonder what went wrong..sometimes if you dont space them out far enough they dont crisp and just start steaming which makes them soft..so its not a good idea to put a bunch of them on one baking sheet. it could be the baking sheet you cooked them on..i usually use a dark coated pan..could be the altitude of where you live which can make a big difference of the oven temp you need to use..or even the thickness of the fry size..i know when i first started baking them it took me a few tries cause they would turn out soggy.. but i kept making adjustments and finally perfected it..
