Egg/salmon casserole for breakfast
I got this from the 5-Factor recipe book. Delicious!!
3/4 cup egg whites
1 TBSP chopped onion (the recipe calls for leeks, but I don't want to buy them just for this recipe)
1 oz. smoked salmon
1 TBSP fat free cream cheese (I find it best to let it sit out for a while and get to room temp)
Mix onion in egg whites in microwaveable dish and partially cover with saran wrap. Microwave for 3-4 minutes - until eggs are fluffy and cooked through (keep an eye on them so they don't explode!). It'll come out looking kind of like a souffle. Let cool a little so the cream cheese is easier to spread. Spread the cream cheese over the eggs and top with the salmon. I usually pair with a plain piece of whole wheat toast. Delicious!!
