ok i need some ideas on what to make..it is only my son and i and i dont want to cook a full dinner for the two of us...so i need some ideas........thanks all..

    My wife made an awesome taco pizza last night.

    98% Lean Ground Turkey
    Whole Wheat Bread Mix
    low-fat beans
    Cooked in the oven

    Topped up with fresh lettuce, tomatoes, olives, and shredded cheese.
    With a splash of hot sauce.

    A salad with lettuce,tomato,onion and green peppers topped with lean ground turkey cooked with low sodium taco seasoning- salsa- low fat cheese- light ranch and light sour cream- Turkey taco salad. Yummy- Cindy :heart:

    Talking about pizza!

    1 whole grain tortilla,
    (toasted in the oven first)
    .25 cup lighter primavera sauce
    .5 rome tomato sliced thin
    3 sliced of bell pepper
    1 sliced mushroom
    (pile on the toasted tortilla, then in the oven at 350 for 10 minutes)
    .25 cup 2% three cheese (kraft), shredded
    (place it under the broiler until the cheese begins to lightly brown)

    YUM!

    And xsargex... you made me think ... SUSHI!!!!

    I like taking ground turkey and adding an egg and seasoned bread crumbs. Add in garlic salt and pepper and cook on a grill.

    Brown the turkey meat along with seasoning and onions
    She uses a thin-crust dough, so top off the crust
    400 Degree's.... really doesn't take long about 10-12 minutes (to touch)
    until the crust is brown and firm

    then top it off with fresh veggies and cheese.

    Just a note about the ground turkey... make sure you buy ground turkey BREAST. Otherwise it can be thigh meat and skin, which isn't really all that awesome for you.

    We buy ground turkey at Costco in bulk. Its the hormone free, 98% fat free stuff. We divide it up into smaller portions and freeze it. I don't got time to break down full turkeys. Nor hunt them either.

    hey xsargex, is it frozen? I have never seen ground turkey at Costco... Dammit, not ANOTHER trip to costco?!?!...

    My dh bought a huge Brisket at Heb . He cut it into 3 huge roasts. I'm going to crockpot a roast today with onions, carrots and potatoes FOR HIM. Brisket- yuck !!!! I'll have a lean cuisine pizza. Cindy :heart:

    Tonight we are doing.....

    Tilapia (frozen filets - broiled with EVOO and cajun seasoning, serve with lemon)
    Steamed broccoli (with lemon and sea salt - after cooking)
    Peaches and Cream Corn (for the kids - not me!)
    Brown rice

    This is a meal we have a lot, and it is soooo easy. My kids love it all too.

    hey xsargex, is it frozen? I have never seen ground turkey at Costco... Dammit, not ANOTHER trip to costco?!?!...

    word up. I think it was the Butterball brand over in the meat section (not the frozen section). I can't remember what the size was. I wanna say around 5 lbs. Comes in the tray with plastic wrap, not the casing roll. They've had it every trip we've ever made, so it wasn't one of those like select products. I dunno.

    We take it home, divide up the portions and then freeze it....is what I meant.
