Its true...no matter how I try to eat super healthy this is the basis for all the dinner I make. It can get boring so I am always looking for ways to spice things up. Here is a MODIFIED version of a recipe I found. I say modified as I left out the grilled portabella mushroom and onions (yes I am a picky eater and I can't seem to change it!) What I loved is that this appears DECADENT and comes to 455 calories per serving. I am making it tonight and I can already tell I will love it!

Grilled Chicken (everything besides the chicken is to make a marinade, then grill chicken till done. Recipe also used mushrooms in this marinade and grilled as well)
Chicken - Thigh, meat only, cooked, roasted, 4 thigh, bone and skin removed 435cals
Trader Joe's - Red Wine Vinegar, 2 tbsp (15mL) 0 cals
Heinz - Worstershire Sauce, 2 tbsp 0cals
Generic - Crushed Red Chili Pepper Flakes, 1 teaspoon 6cals
Trader Joe's Organic - Premium Extra Virgin Olive Oil, 2 tbsp (15mL) 240cals

Sauce (it called for peppers seperate, but found peppers in the tomatoes to save a step. Could also add sauted onions if you like)
Trader Joe's - Organic Tomatoes Diced & Fire Roasted W/ Organic Green Chiles, 1 container (1 4/5 c (120g) ea.) 88cals

Italian Super Smashed Taters (Boil potatoes and then smash everything together)
Yukon Gold - Yellow Fleshed Potatoes, 4 medium potato 440cals
Cheese - Ricotta, part skim milk, 1 cup 339cals
Milk - Nonfat (fat free or skim), 0.5 cup 43cals
Spices - Garlic powder, 0.5 tbsp 14cals
Cheese - Parmesan, grated, 0.5 cup 216 cals

Put one fourth of potatoes on plate, add a chicken thigh and top with tomato and pepper sauce! One serving is 455 calories! YUM
