Frozen Pina Colada

I love a good frozen drink in the summer but most of them are loaded with calories. I found a recipe that cuts the calories way down so thought I would share with all.

You will want to freeze the pineapple as this will help keep the drink frozen.

2 cups of coconut milk

2 cups of fresh frozen pineapple

2 1/2 cups of ice cubes

3/4 cup of rum such as Bacardi

2 tablespoons light agave nectar (not sure what this is)

Combine all the ingredients in the blender until mixed and smooth. Pour in a glass garnish with a pineapple ring (optional) and enjoy!

Serves 8 and serving size is 2/3 of a cup
CALORIES 158
FAT 1.2 GRAMS
PROTEIN 3.5 GRAMS
CARBS 18.6 GRAMS
FIBER 1.1 GRAMS

    WOW!!! wish i had that last year when i was in Jamaica. I drank the full calorie ones. great tasting but not great for the waistline!!! thanks for the recipe. gonna try it very soon!!

    Sounds delish, but I think I'll need more than 2/3 cup....maybe we could add more ice? The agave is from a cactus. Its a sweet sugar like syrup, but its not supposed to spike your blood sugar.
