"Hot Pink" Smoothie
I've been trying new smoothie recipe's lately, and this is my favorite one, compliments of my aunt. The hot pink color comes from beets!
1 1/2 cups coconut milk
5 or 6 baby carrots
1/2 medium beet
1/4 cup chopped cashews
1/4 cup chopped dates
2 tsp. vanilla
10-12 strawberries
1 banana
spoonful of flaxseed
My aunt puts the carrots, beets, and cashews in a food processor first before mixing everything together in a blender...I don't have a food processor though so I just chopped them first by hand and it turned out fine.
Makes 2 servings (340 calories per serving)
