Cannellini Bean Salad

Thought I'd share...this one was good.

Cannellini Bean Salad

2 Tablespoons extra-virgin olive oil
1 Tablespoon red wine vinegar
1 Tablespoon minced red onion
3/4 teaspoon dried oregano (you can substitute fresh or try basil too)
2 medium cucumbers, peeled, seeded and diced
1 (15 oz) can cannellini beans, rinsed and drained
1 red bell pepper finely diced
salt (I used sea salt) and freshly ground black pepper

Whisk together oil, vinegar, onion, and oregano in a large mixing bowl. Add cucumbers, beans, and bell pepper; toss to combine. Season with salt and pepper and serve

Makes 4 (1 cup) servings

Per serving 180 calories, 8 g fat, 1g saturated fat, 7 g protein, 22 g carbohydrate, 5 g dietary fiber, 80 mg sodium.
