Anyone have any fishcake recipes?

I adore fresh fish and would love to make some fishcakes with the salmon I bought today but i don't have a recipe for any! Please help!

    Hiya! Honestly, I don't have a "recipe"- I generally follow this though:

    Poach the salmon and add to a mixture of 1 part mashed steamed cauliflower and 1 part boiled mashed potatoes (make sure the mixture has been well-mixed, seasoned and cooled for at least 20 minutes in the fridge before touching it for the next step). Next, take the mixture and form circular patties. Wrap each pattie in plastic wrap and cool for 20-40 minutes in the fridge before the next step (if you dont have time for this step, I wouldn't even do fishcakes because it makes them much more solid).

    I used to then batter the cakes in flour, egg/milk, and breadcrumbs, but I think you could just spray some cooking oil on them and a light dusting of bread crumbs and then pop them in a hot oven to get nice and crispy on the outside.

    Enjoy! You can also add some frozen boiled peas in the cauliflower, potato and salmon mixture too.

    Make a thai paste with lemon grass, chilli, lime leaves, soy sauce, coriander and a little shrimp paste blend it up and roughly chop up the salmon mix it in and there you go.
