Have you tried green smoothies at all? They can help boost your veggie intake by quite a bit, I have one for breakfast almost every day, and I've practically had all of my "recommended" servings of veggies for the day right there, plus I eat lots more throughout the day.
My go-to recipe is
1.2 cup cold water
1/2 head of romaine lettuce
1/2 large bunch of spinach (at least one cup)
2 stalks of celery
2 kiwis
1 pear
1 banana
blend in order until smooth, and you can always mix in different fruits or veggies depending on your tastes...sometimes I add kale or swiss chard or a bit of fresh parsley, or switch the banana for a mango, the pear for an apple etc...coconut milk ice cubes , it's very versatile, just make sure you have a good selection of greens in there, and play with it It usually makes enough for at least two servings, but it keeps well in the fridge covered for a few days, or make lots and freeze it if you prefer.0 -
