stick me with a fork Im done :(

I have lost all but the slightest thread of motivation. I'm usually good about eating the right amount of calories daily, though I will admit I "cheat" because I refuse to deny myself of the foods I love, so I will average between 1000-1800 depending on the day. I go to the gym about 3 times a week (I love the arc trainer) and have just started to Zumba once a week. I lost about 40 pounds about 1 1/2 - 2 years ago, but have come to a screaching halt for the last year or so. I feel like a yo-yo, up 5 down 5 up 7 down 3 and up down up down. It's very tiring and frustrating. I also have gastro paresis, which usually causes the opposite problem of fighting to keep on weight, but not me. That would be too easy :).... Instead this causes me to feel very full very fast and stay full for a long time. (ie I can eat a muffin at breakfast (7:30ish) and not feel hungery until dinner time (6:30ish)). I try to make sure that I still eat a minimum of 1200 cals a day and at regular times, but I always feel over full and bloated.
I'm feeling frustrated, exhausted, stressed, uncomfortable and over all just done with it all.... I would love to loose another 25-30lbs to feel comfortable but I'm just lost as to what to do any more.
Anyone who can give me any advice please do.....
