stir fry??

Can you throw any vegetables into a stir fry?
I hate most of the vegetables that some in packages of stir fry such as carrots, green beans, snap peas etc. I like weird vegetables like eggplant, squash, zucchini and such. Can I make a stir fry out of my favorite vegetables and maybe throw some chicken in there?

Sorry if this is a stupid question but I'm not much of a cook and I'd rather not experiment wasting time and money.

    I think that anything that you will like and eat can be stir fried....and yes add the chicken and maybe a bit of sauce that you like and VOILA'.....Dinner is served. and you don't have to be a chef to do it.

    The great thing about stir fry is you can add anything in there! Of course you want what you throw in there to match somewhat, but all veggies go together and chicken is perfect... some people add in a white wine for flavor or lime beer (my friend did this and it was pretty good) Good luck!

    There's a place where I live called "The mongolie grill" and it's like a stir fry buffet, you get a bowl, but whatever veggies, meats, and sauces you'd love!! And they have all sorts of veggies!! My fave combo is broccoli, baby corn, mushrooms, and chicken. Then I add a little bit of sweet thai chilli sauce and they cook it up for me! My husband gets meat, meat and more meat. I think the last time we were there he got a piece of broccoli to appease me, but it somehow ended up on my plate....

    all veggies are good in stir fry. my one suggestion is to prepare the eggplant before throwing it in - salt and allow some of the moisture to come out before cooking. If you like them, I LOVE stir fry to spinach, mushrooms and broccoli with shrimp as the protein, although I also use chicken. I just drizzle a little low sodium soy sauce on at the end.

    QQUESTION: What kinds of sauces are the healthies and lowest calorie sauces to do with stir fry you all use? I want to try this!

    I don't use any sauces really...I use white wine. It makes it very flavorful without a bunch of cals, fat, or sodium. My stirfrys are usually...tofu, snow peas, broccoli, sprouts, peppers, squash, diakon radish, and edamame.

    I put zuchinni and squash in stir-fry all the time. It's really yummy.
