In need of veggie recipes!

I am a big veggie lover! I am wondering if anyone has stumbled across any good veggie recipes.

So far I have tried and loved:
Pizza zucchini boat
Portabella mushroom pizza
Cauliflower Pizza
Kale chips
Baked cauliflower
(Just to name a few)

Is there any other delicious recipes I could try? I love these recipes because they are low calories and they don’t leave me feeling all nasty and bloated afterwards! I love to have light dinners so if anyone knows any other tasty meal/snack ideas please share! Thank you! :flowerforyou: :wink:

    SUPER GOOD! Zucchini/Summer Squash Recipe:

    The only substitutions I made were 4 ounces of cabot 75% fat free cheddar cheese and 4 ounces of cabot 50% jalapeno cheddar cheese

    I also served this as the main dish and figured the nutritional facts breakdown for 5 servings:

    174 calories
    18 carbs
    3 saturated fat
    2 sugar
    2 fiber
    17 protein


    -Spaghetti Squash with light butter or olive oil, italian seasoning, and parmesan cheese
    -Mashed cauliflower

    I love braised cabbage. I usually sautee some shallots in a little oil then I'll add the cabbage with salt and pepper. After letting it cook for a minute or two I'll add some stock or water if I don't have any. A small splash of cider vinegar and I let it cook until tender.

    I've just discovered Quinoa and it is amazing. Tonight I made it and then added zucchini and some spaghetti sauce. Fantastic! There are a ton of recipes with it. And it is so good for you.
  • I love trying new recipes! We eat a ton of veggies since we're newly vegan/vegetarian. Some of the family faves are:

    ratatoulli
    pasta with lentils, kale, tomatoes and veggie stock
    home made minestrone with extra veg
    chinese bok choy
    vegetarian fajitas - squash, zuchini, red peppers, yellow peppers, onions, with dry fajita seasoning on a whole wheat tortilla
    black bean and sweet potato burritos
    We also do ALOT of stir fries with frozen vegetables, and serve it on brown rice/sometimes spaghetti noodles.

    Even if you eat meat, you can go to allrecipes.com and enter the word "vegan" or "vegetarian" and there are a TON of awesome recipes on there. You can always alter them to be lower calorie, or add some baked chicken or something along those lines. :)

    I steam or microwave or whatever to artichoke hearts (I get frozen ones from Trader Joe's) and then I pour spaghetti sauce all over them, it tastes like pizza. You can put on cheese if you want, and or turkey pepperoni or something if you like.


    Baked, stuffed Peppers. I just use brown/wild rice with ground turkey and add sea salt, garlic/onions and tomato sauce.


    quiche (no crust), use sun dried tomatoes, spinach, mushrooms, sometimes zucchini too.

    Wow i need to try the black bean and sweet potato wrap recipe! I LOVE sweet potatoes!
