Low carb but high protien options

My mom is in need of low carb but high protien options. She is on a special diet and needs ideas. I drew a blank. I could also use the advice. My carb counts are always high.

    chicken, tuna are protein and not much else.

    Any meat or fish is low carb with protein and fat.

    Surely a "special diet" tells you what to eat ?
