    Do you have the recipe for turkey meatloaf ? :)

    i just use ground turkey and whatever veggies i have - any of the following usually -

    onion
    green pepper
    garlic
    spinach
    chopped cabbage
    riced cauliflower
    seasonings

    top them with salsa or a little hot sauce

    cook them at 400 for about 25 minutes

    Cool, and there was me thinking breadcrumbs were not optional ... I'll give that a crack.

    My fave is my tuna wraps.

    1-2 cans of tuna mixed with olive oil, tomatoes, celery, avocado, salt & pepper. Spoon over 3 large romaine lettuce outer leafs. Amazing & very healthy!

    Is that really 1-2 or should it be 1/2? 2 cans seems an awful lot?

    I love this! I work 3p-1130p so I eat lunch and dinner at work.....so I yes I love love this idea.
    I usually bring some sort of sandwich either I made it or stopped at subway on the way to work or I eat lean pockets, not so much fun

    Spiced Tuna patties:

    1 can tuna
    1 chopped spring/green onion
    1 egg yolk
    chilli pepper flakes
    Black pepper
    1.5 tbap cream cheese

    Combine ingredients in a bowl and refrigerate for 1 hour to firm. Heat oil in a pan and form into patties and fry for 2 mins either side. Serve with a squeeze of lemon & green salad.

    Greek Meatballs with tzatziki & salad: (makes a lot of balls, so keep them for snacks)

    500g Ground lamb/beef
    garlic
    1/2 tsp cinnamon
    1/2 tsp cumin
    1 tsp dill
    3 chopped spring/green onions
    1 egg yolk

    Refrigerate for 1 hour

    Form into balls, and bake for 20 mins at 200 degrees celcius. Serve with:

    Lettuce
    Black Olives
    Feta cheese

    Tzatziki sauce:

    Natural full fat greeek yoghurt
    shredded cucumber
    fresh mint
    garlic powder

    -Shredded chicken & Pesto salad.

    - cooked shredded chicken breast.
    - 1 tbsp green pesto
    - 1 tbsp mayo

    Serve in lettuce wraps.

    I love to make Turkey or Chicken stuffed green/red bell peppers and they are even better the next day. I send my guy off with them to work whenever I make them. Plus, just the half of the pepper fills you up...you can skip the rice and add other things like tomatoes and veggies with the meat. Or use less brown rice. :) Can't figure out how to get pics off my phone.

    How do I add a picture? so that everyone can see it?

    Feel free to browse my diary, too. Just omit sweet potatoes/rice, etc if you want lower carbs, I increased mine for my activity level. I mostly eat meat/poultryfish, veggies, and add some fat for flavor. :) I mostly use leftovers for lunches the next day.

    I love L.C. I have so many outstanding recipies ,when I have dinner guests they have no clue they are eating "diet" food :)...Do you do "oopsies"? I make rolls and flatbread....use for sandwhiches and burgers and such...LC has come a long way:)
