I made this for dinner last night and it was quick, easy and tasty. A great way to get some extra veggies into your diet.

1 head broccoli (mine was about 450g), chopped
1/2 small potato (approx 100g), chopped
1/2 small onion (approx 75g), chopped
1 clove garlic. chopped
1 tsp butter or olive oil (I used 5g Devondale light spread because that is what was in the fridge)
1 tsp vegeta stock powder
1/4 cup skim milk powder (or 1 cup skim milk)

Heat the butter or oil in a medium sized saucepan and cook the onion and garlic until soft. Don't let it get too brown.
Add the potato and stock powder and cover with water (about a litre) and cook until the potato is soft.
Add the broccoli and cook for a couple of minutes. You want it to be soft but still green and not overcooked.
Take it off the stove and let it cool for a few minutes, then add the milk and blend it up until it's smooth (I use an immersion blender).

All done!
My version made 4 servings at 85 cals each.
