Company had to hit the road before the next snowstorm blows in. What a year.
All that snow is good for the forest--YOU KNOW. It'll melt slow and soak in deep and prevent forest fires. We're already having fires up North. It's going to be an awful summer. Without rain and snow in the mountains we're destined to burn. Sigh.
Other news. I got tickets to fly to Minnesota May 10th to May 31st. I'll be home for Mom's 93rd birthday. I'm not crazy about flying. I don't like crowded places. But, I'm going.1 -

Fine--I cooked UP a storm. The squirrels were racing up and down the hall playing hide and seek with their uncles. Yesterday was a holiday too. A bit more cooking. I made a pasta w cherry tomatoes, cubed zucchini, asparagus, EVOO, and Parmigiano Reggiano. It turned out well. I was pooped though. I'm a one-man-band here.1 -

I used a large tubular pasta--12 min al dente. Tip--I cube my zucchini and throw it in with the boiling pasta 2 or 3 min before it's done. I cut my cherry tomatoes in half and simmered in EVOO for about 5 min. My asparagus was already cooked so I just cut it in pieces and threw it in with the tomatoes when they were a bit cooked--salt (or broth crystals) and pepper. After I drain the pasta and zucchini I put it back in the pot and pour the tomato mixture in and stir. I then cut up fresh basil and mixed it in. It's colorful and Springlike. Add freshly grated PR on top.
The nice thing is that you can lighten it up by increasing the zucchini and or asparagus.1 -
