Veggies veggies and more Veggies!

Came across a great recipe yesterday on Kraft Recipes for an "italian Veggie Bake" This is so perfect for the summer garden vegetables especially but so low in calories for how delicious it is ! I just made it last night and it was fabulous.
1/3 cup Kraft Tuscan House Italian Dressing
1 large onion, chopped
1 small eggplant, cubed
1 zucchini, chopped
1 large red pepper, chopped
1 pkg sliced mushrooms
1 can (14.5 oz) italian-style stewed tomatoes, drained and cut up
1/3 cup parmesan cheese
Heat oven to 350.
Heat dressing in large skillet on medium heat. Add onions and cook 5 min or until tender. Add eggplant, cook and stir 5 min. Add zucchini, peppers and mushrooms, cooking and stiring about 5 min or until tender. Stir in drained tomatoes. Bring to a boil; cover. Simmer on medium-low heat 15 min.
Pour into casserole sprayed with cooking spray -- top with parmesan.
Bake 25-30 min or until done.
My suggestions/preference --- use cherry tomatoes cut up instead of the canned stewed tomatoes.
I also think this would be great with chicken baked with it (precooked) -- as well as just a side.
It really was good.
Only 50 calories for 1/2 cup serving; 3g total fat

Carbs 6 g Fiber 2 g
Sugars 3 g Protein 2 g
