    Light Garlic Bread
    Adapted from EatingWell.com
    Serves 4

    4 large cloves garlic, peeled
    1 teaspoon extra-virgin olive oil
    1/4 teaspoon salt
1/2 baguette or 1/3rd loaf Italian bread, cut in half lengthwise (sub. with a low carb bread?)

    1) Preheat oven to 450°F.

    2) Place garlic in a small saucepan with enough cold water to cover and bring to a simmer over low heat. Cook 3 minutes and drain.

    3) Mash the cooked garlic, oil and salt in a small bowl with the back of a spoon until a smooth paste forms. (This might take awhile, but it’s worth it. Use a fork if the spoon’s not doing the trick. – Kris) Spread the mixture over the cut surfaces of the bread.

    4) Place the bread on a baking sheet and bake until the bread begins to brown around the edges, 4 to 6 minutes. Slice and serve.

You know, you can put that garlic topping on some sliced salmon or chicken breast strips ... I kinda remember doing that type of thing back when hubby lost weight on atkins.

There are also low-carb chips or flatbread depending on your current phase.

you can try using butter flavored cooking spray and a fresh garlic clove on a low carb hamburger bun. spray the top of the both halves of the bun with the cooking spray and rub a fresh garlic clove over it to absorb the flavor and sprinkle a little italian seasoning on it for an extra flavor kick. I find it tastes best when you grill it but it works in the oven as well. The best part is the only calories come from the low carb bun. Good luck on your quest.
  • add garlic to the other things that you eat. this is something that is very good for you - and while it may not stop the craving (as it could be a carb craving) the taste of garlic could make it subside.

When I make bruesetta I toast the bread under the broiler. The rub a cut piec of raw garlic over the hot bread. This gives the bread lots of garlic flavor without any butter or oil. If you used a low carb bread I think it would be good. Then if you wanted to add alittle EVOO just drizzle it on.
