chicken salad

whats a good healthy chicken salad recipe is there any good substitute for mayo i could use so its healthier i think im gonna add celery and grapes to it (it tastes really good) but what are some other healthy things i can add in or whats your chicken salad recipes that are healthy

    I do dried cherries, almonds, celery, and purple onion in my chicken salad. And you can skimp on the mayo (or use low-fat) as much as you want - maybe add in a little dijon. Oh, and I cook my chicken in bacon grease - after crumbling up the bacon for mixing in with the chicken salad.

    I haven't made my recipe since I've been doing MFP, but I'm having a lunch next week and plan to serve it, so I need to figure the nutrition soon so I know how to plan my day around lunch because I WILL be eating chicken salad (maybe in a lettuce wrap instead of bread...)
  • I try to use as little mayo as I can get away with, but I love chicken salad with curry powder/mayo/celery/raisins/onions.

    sounds good and i like the lettuce wrap idea i usually just eat it on a few wheat thins

    would it be healthier if i used miracle whip over regular mayo? (im gonna try to cut back on that anyway but which would be better)

    Replacing mayo with low fat Greek Yogurt is a great option. I use this in place of mayo in alot of recipes.

    i"ll have to try that sometime i dont have greek yogurt at home right now
