Would like to go Vegetarian!

Hi all, I may not have posted this in the right area, but in my opinion it was for support... At any rate I'd like to know what suggestions I can get for starting myself off with some vegetarian idea (yes I know to search the recipe section, I've been doing that) but I'm looking more of a 'substitute x for y' sort of thing and maybe take some baby steps. I'm worried if I try to immerse myself fully into it that I may fail hard. I'm a type 2 diabetic that is just simply looking to eat better, lose weight and lose the needle!

    Hi, I became a vege a few years ago but frustratingly still have to cook meat meals for 2 of my remaining 3 people at home- so annoying as the vege meals are so much easier and quicker!

    I like a lot of bulk to eat and one of my faves is chopping up loads of veg- aubergines, courgettes, brightly coloured peppers, red onion, celery etc, spraying it with fry-light and shaking garlic pepper over it. I then just roast it all in oven for about 40 mins. Sometimes I tip some tinned tomatoes or passata over it. Crumbling some feta cheese over adds another dimension. I could eat it by the bucket load.

    Another really quick meal is pasta with a tomato based sauce- I tend to just tip a jar of passata into a pan, add some lazy garlic, herbs and salt and pepper, maybe some tinned sweetcorn and black olives. Simple. quick and easy, as is a jacket potato with baked beans with a bit of tabasco for a 'kick' and maybe some grated cheese.

    I also really like quorn sausages and may have these with the roasted veg and a big salad.

    hi i'm a beginner myself, wanted to go vegetarian for ages.

    * agar is a good sub for gelatin, if you google pics you will find loads of ideas!
    * spirulina is what i use when i need a quick protein boost.
    * read all the labels! gelatin can be hiding everywhere.
