fruit? ripe unripe

does an unripe fruit have a different nutritional profile than a ripe one (and vice versa)?

does a ripe honeydew melon have more vitamin C than an unripe honeydew melon?

along the same lines, is a ripe fruit more calorically dense than an unripe one?

What about fiber? Is there more or less fiber in an unripe fruit than a ripe one? Or is there no difference?

    That's a really interesting question. I have no idea of the answer but it made me think of bananas for example they seem to get sweeter and sweeter as they ripen, and they do change once they get over ripe but I honestly have no idea if that would change the sugar or calorie count. I'd imagine that things may begin to lose nutrition value as they get over ripe but not sure how they would be under ripe. I'd be really interested to see responses.

    The fresher the fruit, the more nutrtion, just at it's peak ripeness...

    The only thing I've heard is that unripe bananas are a resistant starch and the calorie count is lower. It is kind of like eating cold potatoes or rice. The body doesn't process them the same. If you want to find out more you could google resistant starches.

    Intuitively seems correct since fruit sweetens as it ripens

    Don't dis it till you've tried "Achaar" (Indian version of pickle) or have had unriped mango in lentils.

    Also, unriped bananas are good if cooked right

    I remember Paula Deen on a trip with her family on the food network saying that the longer a banana stays on the tree, the sweeter it gets.....for what its worth lol

    I prefer most of fruit to be lightly under-ripe...it's crunchier!

    I agree with the other poster who said mango. Slightly under ripe mango is divine! I also prefer slightly under ripe pears and bananas.
