banana walnut muffins
2 tbsp. brown rice protein powder
2 tbsp. pb2 (or peanut flour)
2 tbsp. ground flax
2 ripe bananas
1/4 cup wheat bran
1 egg (if vegan can sub almond milk for egg)
1/4 cup walnuts
14 grams of raw cocoa nibs
1 tsp. organic cane sugar
2 splenda (can sub other sweeteners)
1 tsp. baking soda
1/2 tsp. vanilla extract
1/2 tsp. cinnamon
Set oven to 350 f.
Mash bananas in small bowl, add cinnamon and vanilla.
In large bowl combine other ingredients except for the cane sugar. Make sure to crush up the walnuts.
Combine banana mixture with dry mixture.
Pour into muffin pan, sprinkle sugar on top of muffins.
Cook until lightly brown and firm (about 15 minutes).
Makes about 9 muffins.
