Easy Corn Dog Muffins Dairy and Gluten-free
People have been asking..so here it goes. They are not exactly diet food, but I make it for my son on the go and he LOVES them. I use cupcake liners to line the cupcake pans as well (so you need those). My son has food intolerances, so these are also DAIRY- AND GLUTEN-FREE!
I used to make them with a gluten-free cornbread mix, but this is way cheaper for me than those $5 mixes. This makes 12 muffins, so double the recipe for 24. These are also egg-free.
2.75 cups of unsweetened almond milk
2 Tsps. Apple Cider Vinegar
1 Cup Ground Corn Meal
1 Cup Masa Flour (corn flour)
1/2 cup brown rice flour (you can use white rice flour, or a gluten-free flour mix or flour I guess).
1 TBsp of Baking Powder
1/2 Tsp Sea Salt
2.5 Tablespoons of honey (or to taste, sweetens it), you can try Stevia drops if you like instead, etc..but I use Honey.
5 Hot dogs, cut up into rounds or pieces (I use natural turkey ones, or you can get those Applegate gluten-free ones, Trader Joe's has some really good natural uncured hormone-free beef dogs, etc.).
Put in preheated oven of 350 degrees F. Mix everything together into a bowl (put the dogs in last). Fill the muffin liners up to the top and bake for around 15 minutes (check the center of one).
