Question on Net Carb Calculation (Specifically Pasta)

Okay, at the behest of LeanLioness, I did some research into DreamFields pasta. I've been ordering FiberGourmet, so I brought up the PDF's and compared the two. This is what I found:

Dreamsfield
Cal: 190
Fat: 1g
Sodium: 10mg
Carb: 41g
Fiber: 5g
Sugar: 1g
Protein: 7g

FiberGourmet
Cal: 130
Fat: 1g
Sodium: 120mg
Carb: 42g
Fiber: 18g
Sugar: 2g
Protien: 6g

On the Dreamsfield website, they had said:

"Count 5 grams of carbohydrates per each
56 g serving when controlling carbohydrate
intake and blood sugar levels to promote good
health and weight control. Dreamfields offers
significant health benefits, and has been
clinically tested to establish digestible
carbohydrate levels."

This had something to do with Fiber, Protected Carbs and Digestible Carbs. Can one of our low carb gurus please explain why even though it says 41 carbs, they only want you to count 5? Also, can someone show me the calculation for FiberGourmet? (Because huge boxes of that is stuffed in my pantry, and I would love to eat that in place of having to get rid of it and buy Dreamsfield instead!)

    You count 5 grams of Digestible carbs because Dreamsfield is made using a non-digestible fiber called inulin.

    Since inulin can not be digested, you don't count those carbs, only the 5 grams of carbs has an impact on your blood sugar, which should not impact it much at all.

    The fiber gourmet has 24 digestible carbs............

    With carb counting, you don't count the fiber carbs, as your body doesn't digest them.

    So the fiber gourmet has

    42 total carbs
    -18 fiber carbs
    24 grams of carbs to count that could have an impact on your blood sugar.

    I don't know how sensitive your body is to carbs, but I would be on a roller coaster as far as blood sugar goes with that many carbs, even with eating it with fat and protein.
