Lower carb side dishes besides plain vegetables?

I have decided to try reducing my carbs to 50 - 100g a day. This still leaves room for my fruit and small servings of bread, grain or starchy veggies. I am trying to find some lower carb recipes for side dishes that are more satisfying than plain vegetables. I would love some ideas for sides with 20g of carbs or less for a decent size serving. I am somewhat of a volume eater and I can't stand eating tiny meals like a bird :laugh: I love my huge salads and big bowls of low cal soup :wink:

So far I am planning to try these:

broccoli and bacon salad
turnip "fries"
strawberry spinach salad
baked asparagus

I made mashed cauliflower topped with cheese yesterday and everyone enjoyed it. I told my kids it was a potato casserole :wink:

    check the Atkins website for recipes. I am doing low carb too, and one of my faves is an asian/japanese cucumber salad

    it is only like 12 net carbs for a whole recipe ( 1 cucumber's worth)

    Some people cook up sliced radishes until they are like crispy potatoes, or boil them like new potatoes! I have yet to try it.

    I steam a spaghetti squash in the mic...let cool, scoop out the "noodle"...top with nsa marinara and freshly grated parm/regg...bake, enjoy.

    I really want to try the spaghetti squash idea since so many people say it is great. I have yet to find one in the stores but I will keep my eye out for one.

    I second the spaghetti squash idea! It's yummy! I have it as a side w/ meatballs.

    There are other things you can do w/ cauliflower. I turn it into cauli mashed 'fauxtatoes' and mock 'rice' as well and it helps with various dishes!

    they have some great low carb side dishes submitted by the low carb community. I use the spaghetti squash frequently- great pasta substitute.

    Asian-style cole slaw...you know, the kind with ramen noodles. Except leave those out, and sub sesame or sunflower seeds if you still want that crunch. I also leave out the sugar in the dressing.

    Tomato cucumber salad w/ italian dressing (I make my own)

    I like plain veggies....top them with cheese and/or bacon. I cook the veggies in bacon fat...mmm.

    Oooh, today I had baby carrots dipped in almond butter (no sugar added kind) - it was like a dessert for me!

    Caprese salad (tomato, basil, & slice of fresh mozz topped with olive oil, I believe)

    Last week I sauteed mushrooms in coconut oil, yum!
