This weekend we are heading to my in-laws cabin along with a number of my husband's siblings and their children. My mother in-law put me in charge of a supper for the group one evening. I was curious if anyone has suggestions for me on what to make. I know someone is already grilling one night, so I hate to do that again. (Unless someone has a super awesome recipe.) I was thinking of making something in the crock pot or doing more of a All-In-One casserole that I came make ahead of time and pop in the oven.
Like I mentioned there are going to be a number of younger kids and adults so I am looking for something to please everyone that is quick as one never knows what activities will be going on during the day.

This is my absolute fave crock pot recipe (that photo doesn't do it justice, what you really end up with is a gorgeous rich dark stew!) I'm suggesting is because I made half the recipe and with some pasta and salad it fed 7 adults and 2 kids, on HALF so a whole amount would make a ton, my only tip is I added tons more carrots and fennel (probably why it went further) you could have it with pasta, or quinoa and a nice leafy green salad, it is divine, I thought fennel was eww, but this absolutely changed my mind (so don't think of leaving it out, it makes this dish what it is!), pop it on in the morning and let it cook all day long! once done I pulled the meat with a fork (it gets like pulled pork) and dumped it back in the pot to serve.AMAZING!!
(For measurement etc, note that Its an Australian recipe)
Other wise now I mentioned it pulled BBQ pork is pretty amazing too, and can be served with veggie's and/or salad and bread etc etc.

Grilled chicken, marinated in garlic, olive oil, cilantro, honey, and lime - For the kids, just brush each piece of chicken with olive oil and grill. Drizzle with honey as soon as it comes off.
I swear, it is TO DIE FOR.0
