How about some chicken meatball soup?

This recipe is with turkey, but chicken works too.

Patties, tacos, meatballs,. You can really use it anywhere you would use beef.

A thai dish my friend taught me:

cook up ground chicken (1 lb) in large skillet and drain excess fat.
add a chopped up red onion, mix up and let cool

    meanwhile mix together:
lime juice (2-3 T.), chili pepper flakes and fish sauce (1 T.)

mix in the dressing with the chicken/onion mixture

then add chopped cilantro and some chopped thai basil

add more lime juice if you want.

    I serve with rice.

Also, I've noticed a lot of ground chicken/beef dishes like this in thai restaurants, you may want to search around to see what else come up.

I cook mine with a tsp olive oil and lemon juice to cover with fresh herbs, then let it cool and poor the whole lot over a salad - the sauce then is a salad dressing

I second making burgers. Skinnytaste.com has a great recipe for turkey burgers, but you could easily substitute the turkey for chicken!

Oh my! It's all I ever make. My husband actually prefers ground chicken to beef.

    chili
    meatballs
    tacos
    burgers
    soups
    meatloaf
    on salads
    shepherds pie (with cauliflower topping)
    served over rice

    I could go on…
    Imagination is key
