Does anyone have any low carb mexican/spanish recipes? I am having a craving!

    I don't care much for the low carb tortillas - I prefer just a few tortilla chips in a taco salad.
    I make my taco salad with shredded greens, cabbage, shredded cheese, ground beef (or turkey) black olives, guacamole, sour cream & tomatoes if you have extra carbs/calories left over.
    For dressing I add a little taco sauce or salsa to bottled Italian dressing.

    You can also take a lo carb crustless quiche recipe & add your taco filling stuff. That's really good.

    Trader Joe's has some good flax seed chips that are low in carbs.

    Basic Tacos!

    Ground turkey w/ taco seasoning
    Lettuce
    Cheese
    Olives
    Tomatos
    Whatever you want to put on them, all on a low carb (7 net carb) tortilla.

    OR

    You can make your own taco shells with cheese. Drop about 2 ounces of parmesean or other hard cheese onto glass bake-ware or wax paper on a cookie sheet at 350 degrees and let it melt/harden for 5-9 minutes. When it starts to get a little brown around the edges, pull it out and drap it over a drinking glass so it makes a bowl shape. It will harden to be crunchy. Then put all your fillings in there!

    *I also make little Parmesan 'chips' like this too.

    Make a great queso blano dip and dip veggies in it.

    1 C Montaray Jack cheese
    1 Can Green Peppers or Jalapenos
    1/4 C Half & Half
    1/2 Tbsp Butter
    Dash of Cumin
    Paprika for garnish (and smell!)

    Mix together in a sauce pan and double boil for about 10 minutes. Goes great with celery, broccoli, any raw green veggie!

    Mission Plus! Carb Balance tortillas (I get the original in soft taco size) are amazing - you will never taste the difference. I believe they have 7g Net Carbs. Can use them as is (soft) or cut up into triangles, spray with Olive Oil and Sea Salt, and bake for a few minutes to make chips for a crispy taco salad.

    Taco Salads, Low Carb Enchiladas (using low carb tortillas, they are baked so they taste better), Chick, steak or shrimp fajitas!!
