Sack lunch and breakfast

I need help thinking of lunch ideas I can take with me to work. I live in the Kurdish region in Iraq, but can get most things like I can in the states. Work provides lunch, but it is often high carb, and low protein and fiber most of the time. I have a refrigerator to keep it in and a microwave to heat it. My restrictions are as follows: Bread goes bad fast, and sliced bread is hard to find, and when I do it is white. I want protein and fiber if at all possible. I have access to tomatoes and cucumbers everyday. Most days I can get other fruit/veg from a truck that delivers to the neighborhood. Please help me think of things I can easily take to work with me.

Next, I am the worlds worst at waking up early enough in the morning to cook. I need breakfasts that fit the above criteria also. Right now most mornings I eat high fiber cereal for breakfast.

    If cooking in the morning is a no-go, then consider cooking it at night and reheat the next day?

    I dont normally have traditional breakfasts, and opt for a great big bowl of salad with freshly roasted chicken that had been cooled down to make a nice chicken salad, easy on the mayo, some avocado, celery, onion, chopped almonds, with sliced cucumber... yeahhhhhh nice fiber/protein breakfast right there.

    I make sure to have hard boiled eggs at-the-ready. Matter of fact I have Chinese Tea Eggs in my lunch box right now that Im about to pop.

    Where its just my husband and I, Ill often make a meal for five people: One for each of us for dinner. An extra two for him (knowing him he will want seconds but loves leftovers the next day), the fifth one is for me to take to work for lunch.
