Just wondering...

A few weeks ago when I started trying to be more aware of what I was eating and start working out I gained 2 pounds, the next week I lost 6 pounds from my starting weight...then came my TOM and I went back up 4 pounds. This might seem confusing so here is break down:
Starting weight: 210
Week 1 finished 212
Week 2 finished 206
Week 3 finished 210
So after my period was finished I still weighed the same and I fell off and ate horribly for about a week and was still holding strong at 210, the next day I was back at 212 after eating bad but still working out. So, I know some of the fluxuations are due to water weight but how do I know when it's true weight that I am losing or gaining? I'm addicted to the scale, you would think the numbers would motivate me...anyway if anyone could help me I would appricaite it!
