I use them to make egg muffins. Since already have peppers and onions in them I brown up some turkey sausage and mix in eggs with cheese then bake them in muffin tins. I can then take 2 muffins to work for breakfast. They freeze pretty good too. A bit watery when they thaw out but completely edible.
