    Half a red onion finely chopped,
    Clove of garlic (optional) crushed
    250 grams mushrooms, quartered or sliced.
    1 laughing cow light blue cheese triangle
    Salt, pepper, tablespoon of water.

    Put everything except cheese in a lidded pan over low heat until mushrooms are tender and releasing juices
    Strain the mushrooms to a bowl, reserve the stock

    Bubble the stock to reduce volume and increase flavour
    Stir in cheese triangle until melted. Return the mushrooms, warm through then serve.
    Starter for one. Or serve in toast for a real treat!

    HG's Cheesy Zucchini Skins


    Potato skin fans, REJOICE! Here's an HG-ified low-carb swap for the fatty bar-food favorite. It is SO GOOD...

    Ingredients:
    2 slices center-cut bacon or turkey bacon
    2 medium-large zucchini, stem ends removed
    1/2 cup shredded reduced-fat Mexican-blend cheese
    1/4 cup chopped tomato
    1 tbsp. chopped scallions
    Optional toppings: light or fat-free sour cream, salsa

    Directions:
    Preheat oven to 375 degrees. Spray an 8" X 8" baking pan with nonstick spray.

    Cook bacon until crispy, either in a skillet over medium heat or on a microwave-safe plate in the microwave. (See package for cook times.)

    Pierce zucchini several times with a fork. Place zucchini on a microwave-safe plate, and microwave for 2 minutes.

    Flip zucchini and microwave for 2 more minutes, or until softened.

    Pat dry. Let cool, about 5 minutes. Cut zucchini in half lengthwise. Gently scoop out and discard the inside flesh, leaving about 1/4 inch inside the skin. Thoroughly pat dry.

    Place hollowed-out zucchini in the baking pan, cut sides up.

    Distribute cheese among the zucchini. Chop or crumble bacon, and sprinkle over cheese.

    Bake until cheese has melted and bacon is hot, about 5 minutes.

    Cut each piece in half widthwise, and sprinkle with tomato and scallions. Enjoy!

    MAKES 4 SERVINGS

    Serving Size: 2 skins (1/4th of recipe)

  • I have been making this for a long time but when I logged in into MFP and saw it was only 90 CALORIES, I had to share it.

    Chicken Stir Fry

    1 oz chicken (I bake one chicken breast and use it throughout the week)
    1.5 cups shredded cabbage
    1 Soy Sauce, 1 tbsp (15 ml)
    .25 tsp Garlic Chili Pepper Sauce
    3 Tbsp All Whites 100% Liquid Egg Whites
    2 raw mushrooms
    1 scallion

    Take all ingredients EXCEPT eggwhites and cook on stovetop on medium high until cabbage is soft.
    Place egg whites in microwave safe dish and cook for 45 seconds. Chop up eggs and mix in cabbage mixture
    NOTE: If you do not want the egg whites then it would only be 65 calories. I just happen to love the egg in it. I also add just a splash of the soy sauce in the eggs prior to cooking for added flavor.

    I forgot to mention that when I cook the chicken I wrap it up well in tin foil and add a little soy sauce. after it is cooked I pour some of the juice from it into the cabbage mixture while it is cooking.
