Need some tips for vegetarian low carb on the go

***No low carb bashing please...it is what works for me because grains do not do well in MY body***

I do a lower carb vegetarian diet. With summer right around the corner we will be out and about a lot. We have season passes to an amusement park and two water parks. Plus we will be going to Florida later this summer for 10-11 days.

I am racking my brain trying to come up with on the go snacks/meals. I will be taking a small cooler so I can pack portions of veggies. I have come up with almonds; veggies; hummus; protein water and chia seeds.

I am looking for low carb vegetarian protein bars. The adkins bars contain Hydrolyzed Collagen and that is something I avoid in my vegetarian diet. I have been looking at all the options on amazon for protein bars but nothing seems to fit my needs.

    Yogurt, too, apparently. I honestly don't remember, though, because I haven't had it in my house for so long (vegan and all). I just did a little research.

    Hard boiled eggs are a good one. I love to include fresh avocados in my diet but I think I may look at getting those little on the go packs of guacamole since I won't have access to a knife, etc.

    Well, if you have a cooler you could try some veggie wraps by filling lettuce or any other green leafy with veggies, avocados, tofu or eggsalad (if you eat eggs). They're pretty portable.

    I'm not sure how low carb you are going but larabars are a little high carb for a snack (for me anyway).

    low carb snacks that I like are string cheese, baked kale (wouldn't need the cooler for this one), small servings of nuts. Hard boiled eggs and the other ideas that have already been said.

    I do have other snacks but I'm not vegetarian and I'm not sure exactly what all you don't eat as a vegetarian.
