Delicious Soup Recipe

I just made this lentil soup last night - it was fabulous! And my husband loved it too! (Granted, he will eat anything I put in front of him, but I'm a picky eater and I liked it lol).
▪ 2 cups red lentils
▪ 1 bunch kale, trimmed and stems discarded
▪ 2-3 medium tomatoes, chopped
▪ 3 cloves garlic, diced
▪ 1 tbsp olive oil
▪ 2 tbsp soy sauce, tamari, or Bragg’s liquid aminos
▪ 1 tsp salt
▪ ¼ tsp cayenne (to taste) and 1 tsp chili powder (I think I used even more chili powder cause I like spicy soup)
▪ 1 ½ tbsp cumin
▪ Vegenaise (optional - this is vegan mayonnaise that you can find in many grocery stores)
In a stock pot, soak lentils in water for 20-30 minutes (do not turn stove on yet) . After soaking, add more water if needed (water should be about 2 inches above the lentils.), then simmer for 20 minutes. Add garlic, olive oil, soy sauce, salt, cayenne, chili powder, and cumin and let simmer again for another 20 minutes. Then add kale and simmer about 20 more minutes, before finally adding the tomatoes. After adding tomatoes, simmer for about 10 more minutes. Almost all of the liquid should be cooked off at this point. Salt to taste and serve. Goes well with a dollop of Vegenaise (optional). ~ 4 servings
(I also think half of an onion would have made this soup even more delicious)
