I brown it, add frozen mixed pepper strips. While thats cooking I make half a cup of brown rice. When they are done I mix them in a bowl with 2 tsps of tobasco sauce. Really simple but really good.

and heres a few clean recipes

http://www.thegraciouspantry.com/tag/turkey/ (these are turkey recipes but you can use ground chicken)

http://cleaneatingmag.com/Recipes/Recipe/Country-Style-Beef-Green-Pepper-Soup-.aspx (again calls for beef but you can use chicken. I did and this soup is goooooood)

I always use ground chicken as the "meat" for taco salad and burritos. Here's my recipe:

    1 TBS olive oil
1 pkg ground chicken (one pound)
    1/2 tsp garlic powder
    1/2 tsp onion powder
    1/2 tsp ground cumin
1/2 tsp garlic salt (or to taste)
    1 tsp chili powder
1 tsp dried oregano, crushed in your palm
    3/4 cup tomato sauce (approximate)
    1/4 cup water (approximate)
lime or lemon juice to taste

Heat pan, add oil, saute chicken until cooked through and beginning to brown. Add dry spices and combine, then add tomato sauce and enough water to make the mixture slightly saucy. Adjust salt and lime to your liking and enjoy!

p.s. This also makes a great base for chili. Add black beans, green salsa, a touch of cocoa powder, more tomato sauce and up the spices to your liking. Delish!
